Spicy Butternut Squash Soup

It's the time of year for warm, hearty home-made soup.

Give this simple recipe a go, enriched with plenty of vitamins to ensure your immune system is kept strong, with added benefits for radiant skin and healthy hair.




Ingredients


1 Butternut Squash cut into cubes

1 Onion finely chopped

1 chilli de-seeded and finely chopped

3 garlic cloves finely chopped

1/2 red pepper finely chopped

2 tbsp olive oil

1 tbsp butter

800ml hot veg stock

3 tbsp creme fraiche

Sprinkle of Paprika


Method


Peel and cut the butternut squash into cubes, remove the seeds and centre. ( These can also be bought prepped already)

Bring some hot water to a boil in a pot, add the butternut squash and boil for 15 mins or until soft.


While the butternut squash is boiling heat a pan to a medium heat, add the oil and butter, fry onion, garlic, pepper and chilli till softened, approx 5 mins. If these start to burn add a splash of water to the pan and lower the heat.


When the butternut squash is soft, drain and add onion, chilli and garlic from the pan to the pot with a sprinkle of Paprika.

Add 800ml of stock and 3 tbsp creme fraiche. Blitz mixture together until smooth.


Season to taste


Serve with some creme more creme Fraiche on top.


Serving suggestion


This goes well with a mixed salad and Tuna melt on Soda bread.
