Loaded Breakfast Wrap




Recipe


2 tsp olive oil

Streaky bacon 2 rashers

1/2 red onion finely chopped

1/2 red pepper, finely chopped

1/2 avocado

Chilli flakes 1 tsp

1 small tortilla wrap

2-3 eggs, beaten

Handful of Spinach finely chopped

Chilli sauce (optional)


Method


Heat the oil in a pan, add the bacon and fry for 4-6 minutes until browned. Add the pepper and onion and fry for a further 3-5 minutes


Heat the tortilla wraps in the microwave fo 10 secs


Smash the avocado and layer down the centre of the tortilla. sprinkle some chilli flakes on top of the avocado.


Add the bacon mixture from the pan to the tortilla. Wipe the pan and return to the heat.


Add 1 tsp of oil and add the beaten eggs to the pan and scramble for 2-4 mins.

When the eggs are lightly scrambled add to tortilla.


Sprinkle chopped Spinach over tortilla.


Option to add chilli sauce, wrap up the tortilla and enjoy.
